21. Andorra Crema Catalana

Similar to a crème Brulee, this is very simple and sweet with a burst of orange flavor

Serves 2

Cook time 30 minutes

Ingredients

1 cup full cream milk

2 egg yolks

Lemon and orange strip

5 tbsp sugar (2 tbsp for the top)

½ tsp cornflour

½ tsp vanilla

Method

Warm the milk in a saucepan with the cinnamon sticks, and citrus strip until you can perceive the aroma

Next, in a different bowl, mix the egg yolk with sugar (3 tbsp) and cornflour

Pour the milk mixture into the egg mix, and whisk

Return to the pan and keep stirring until it thickens

Then, pour into a small ramekin and allow it to set in the fridge

Sprinkle the sugar and torch to form a cracking layer
